Yoga + Raw Challenge - Raw Peach Cobbler Recipe

How are you all doing adding one raw meal into your day?

My family and I love raw desserts. Here is one that I'm sure you are going to enjoy.

It's a raw peach cobbler that is easy to make and it can be enjoyed as a dessert or breakfast meal.


Raw Ginger Peach Cobbler

1 raw firm organic peach
1/4 cup rolled oats
1/2 inch+ knob fresh ginger
1/2 tsp mesquite powder
1/2 lemon juiced 

Ginger Marinated Peach slices:
1. Wash and slice peach into thin slices using a mandoline and layer into bowl. Set aside peach that is left after slicing from both sides. 2. Between layers squeeze a little lemon juice onto the layer and drizzle with maple syrup to prevent browning. 3. Continue layering. 4. Once all peach slices have been layered top with maple syrup and thin slices of ginger. 5. Allow the slices to marinate for 1 hour at room temperature.

Oatmeal Crumble:
1. Remove peach remaining on the pit and place into a small food processor or personal blender. 2. Add in remainder of lemon juice, and approximately 6 tbsp maple syrup, 1/2 tsp mesquite powder. 3. Pulse until saucy. 4. Stir in rolled oats to coat and set aside until ready to assemble.

Assembling the cobbler as follows: start with a small amount of crumble, then 2 layers of peach slices, crumble, peach slices and so on with the last layer being the crumble.

Drizzle with a little of the maple ginger marinating sauce and refrigerate until ready to enjoy.

Makes 1 large serving for 1 or 2 to share.
